We are traveling from LHR to Bilbao with a plane change in Madrid. Our layover in Madrid is 1 hr 45 minutes. Will we likely make our next flight having to do EES?

First off, when are you traveling? Arrival time and date of travel make a difference
here.
Second, if you read other posts asking more or less the same question, there is no
real way to be sure. Everyone's anecdotal inputs on how long it took them are nice
to know, but really don't predict the future. Apart from EES, there are other factors
that play into making a connection, so it's impossible to predict with any degree of
certainty.
Good news is that there are a lot of flights from Madrid to Bilbao, so you'll have options
if you are delayed.
Assuming the flights are on a single ticket, you will get there.

You're going to need to stop in at Kuki Cookie in Billbao's city center. Our friends own the bakery. It'll make you forget your EES problems!
