We like to splurge once or twice when we travel, a restaurant that's a bit expensive perhaps but very much worth it, and offers great service or atmosphere or something else that makes it very special. Any ideas for restaurants where we'll be staying? Granada, Cordoba, Ronda, Vejer, Seville, or Madrid? Please share your favs, and if possible why it was great. Thank you!
In Granada, we had a nice splurge at Apo. Excellent beef, very welcoming.
In Sevilla the Mesón Don Raimundo has been acquired and consolidated into an upscale dining complex but you can still see and sense some of the original 14th century foundations and bones when it was a key building in the municipal govts of both the Moorish and Catholic rulers -- and held a Jewish business as well.
La cocina andaluza is distinct from the Castellano food you get up in Madrid and tourists don't expect it, so many restaurants in Sevilla don't venture so far into the tastes of North Africa with an Iberian twist, but Raimundo does.
This is not the place for suckling pig or croquetas de jamon!

If you can spring for their prices, NOOR in Cordoba is a beautiful, modern and very small restaurant with 8 tables, a little out of the center (you can walk). A dinner there is like a class (in a good way) the brings you through the history of Spain during and after the Moorish occupation. I've read it called "gastronomic archaeology)
Every dish is explained and spectacularly presented. It's a very special place and different from any other restaurant I've been to.....it's tasting menu only and they offer three choices, with the least expensive coming in at about 190 euro per person.
Note; you do not have to dress up here, or anywhere else in Andalucia. Sneakers are always ok.

Just outside Vejer, you could try LA CASTILLERIA, but it's casual. Beautiful outdoor/indoor small restaurant focusing on grilled meats but they have non-meat dishes, too, and interesting salads. Maybe not special enough, though.

La Brunilda in Seville has delicious food. You need to book in advance.
In Sevilla, Splurge: Sobretablas (great tasting menu. 10 min taxi from central, worth the trip)
less but fun: Taberna Zurbatan (next to the Mushroom)
In Madrid . So many...but we favored Angelita (wine bar downsatirs, rest upstairs. Need reservations. Closed weekends)
My general perspective is that in Spain you don’t need to splurge for great food. There are a lot of great restaurants from cheap to mid-priced.
If you’re looking for fine dining level restaurants, there are a couple I tried in Madrid that are very good.

Do you want a fairly formal, traditional (but not stuffy) atmosphere? if so, there are two restaurants in Madrid that I can think of now..
MARISQUERIA RAFA (seafood)
MANDUCA DE AZAGRA (strong on vegetables but has varied menu; truly a lovely place, very calm, contemporary design....)

We really enjoyed a warm, dry evening in a Granada “Carmen”, with a magnificent view of the sunset glow on the Alhambra. Since this was over 20 years ago, I can’t tell you how to pick one today.
I think we also scored a view restaurant ( and a view table) in (high-up) Ronda. No memory of the name.
I agree about not having to splurge in Spain. We enjoyed a tapas-crawl in Carmona, and always have fresh churros and chocolate in Madrid.
