Welcome recommendations. Since we are traveling so far it would be e nice to experience a different country pre-cruise. A pre cruise land vacay is something we’ve always done and left us with many cherished memories. In this case I do understand that flying to Vigo from southern. usa can pose a bit of a challenge.
We are wide open to suggestions so long as getting to Vigo from the pre cruise destination can easily be accomplished by train or plane.
Two suggestions, both of which give you a train option to Vigo.
Fly to Madrid.
High speed train to Santiago de Compostela and possible train also to A Coruna.
Fly to Porto (if you can), or Lisbon.
Lisbon to Porto train.
Lisbon, Porto, Braga.

There are trains from Madrid to Vigo. No need to go to Santiago and change. (Renfe does not do that anyway...)
The OP is looking for somewhere different to stay pre-cruise, not for a straight train journey.
And RENFE emphatically do book ticketed connections.
Would you not consider flying to Madrid and spending the time there before taking train or flying to Vigo?
Or, spend time in Santiago de Compostela before heading to Vigo....it's a lovely, small city with beautiful architecture and great, great food.
When will this trip take place?
