Well, I was going to recommend the excellent Casa De La Memoria, but it appears that they are closed on Mondays. If you can go a different day, I highly recommend them.

My favorite was La Casa de Flamenco. On the website there are 4 performances, every 1.5 hours, first at 5.30, last at 10.00.
