I've not been to Segovia, but when faced with the same dilemma years ago, we went to Toledo.
We loved Toledo so much, that we returned last year & stayed for 5 nights! ;-)

I stayed in both Toledo and Segovia this summer and think you'll be delighted with either. They both get a lot of tourist traffic (much of it Spanish), probably especially on weekends. Toledo has more sites you might want to go into, and the historic district is larger, but there's plenty in Segovia to occupy you for a day-trip. There will probably be more walking up and down hills in Toledo--enough to be a concern if not everyone in your group is fit.

Our most recent trip to Spain was in October 2015 & we did not visit Segovia, because we chose to stay in Toledo. My mom does not like taking day trips at her age (89), because she finds them very exhausting. Segovia is on my list, so perhaps will visit on my next trip to Spain ;-)
