My wife and I are flying from Seattle to Barcelona in April on American. The flight we are looking at has a 1 hour 45 min layover in Chicago. Having not gone through there in 20 years is that a long enough layover? We will be staying on American so I assume the next leg will board in the same terminal.

That's quite tight, but it's not the dead of winter, nor ungodly hot summer day which could implact the flight weatherwise. And it's the same airlines.
What's the worst that can happen if you miss the flight? How flexible are the first few days of your vacation? Will you be checking luggage? Once my husband retires in late fall, we will be less concerned with flight interruptions and will probably will willing to take some time risks that we have not taken when we're on the work clock.
