There are multiple processions, many simultaneous, every day until 2 or 3 am or even later. Very special ones are on Thursday night - the madruga. They begin after midnight and end after dawn. This website was very helpful for me. I remember marching bands in the morning as well as processions later in the day.
The Atarazanas Central Market is interesting for its architecture as well as its food (closed Sunday). There are a number of good museums and you'll have plenty of time during the day to visit them. I liked both the Thyssen and the Picasso art museums. The Antigua Casa de Guardia is the oldest tavern in Malaga and well worth a visit. You get wine from the barrel, inexpensive and fun place to try various good wines. It gets very crowded around lunch time. The Popular Arts Museum (Museo Unicaja de Artes y Costumbres Populares) was very interesting. Anhd there are Roman ruins too.
