Inn/Hostel/rental in Spain like Fauzi Azar Inn in Nazareth?

In Nazareth we stayed in the Fauzi Azar Inn and loved it. We would love to stay somewhere with that old world influence again. We liked the, personalization, having Arabic and cooking classes and the breakfast. Loved the tour of the local businesses. We also liked the decor - not looking for the same decor necessarily, but loved the historic part of it.

We are still firming up where we want to go, but I'm wondering if anyone knows of a similar place in or near Madrid, Toledo, Sevilla, Cordoba, Arcos, Ronda or Granada?

I can't answer your question, but I'll clarify for others that the Fauzi Azar Inn is in Israel (I didn't get there on my Israel trip, but it has a great reputation).

I can say that in Spain, a hostal is not a hostel, but a small guesthouse. These will have the personal touch you seek, although they may not offer the tours, cooking classes, etc. They are also very inexpensive. I stayed at the Hostal Acapulco in Madrid http://www.hostalacapulco.com/ (if it comes up in Spanish, click the British flag for English) and the Hotel Santa Isabel (formerly the Hostal Santa Isabel) in Toledo http://www.hotelsantaisabeltoledo.es/Inicio/w/en-US, and would definitely stay in both again.
