We will be in port at Ibiza August 21 (a Monday). What would be the best way(s) to spend eight or nine hours that would be an experience we could find only in Ibiza?

Ibiza is famous for its nightlife. During the day most tourists are soaking up rays at one of the gorgeous beaches or sleeping off the past night's drinks. Bars do not get busy in Ibiza town or San Antonio until early evening, about 7PM.

I wouldn't have thought of getting hammered as an experience we could only find in Ibiza; regrettably, our ship departs at 21:00 hrs. so we'll have to rush since we only have 2 hours.
I'm only joking, and, yes, I'm aware "night life" is the big thing. We're long of tooth and night life is in the past for us. We will have previously visited coastal Italy, Corsica and Palma de Mallorca on this trip, so we were looking for something other than sun and surf (as wonderful as they no doubt are).
