You’d need to buy separate tickets; Madrid to Córdoba, and Córdoba to Sevilla.

To book RR tickets you might go to the Renfe website. Tickets usually aren't available for purchase until 60 days in advance (check that it might be 90, but I don't think so). One ticket at a time. The website was famous for being 'clunky'. The earlier you book the better the price.
