This November, we're going to be in Athens for just over a week. We are considering extending our trip by going to the island of Tenerife for some relaxation, and to avoid traveling back to the States during Thanksgiving week. We would like to be there for (8) days.
Any suggestions on where to stay? Budget around $250/n.
Also, if you've been there, please share your comments on renting a car, seeing the local sites. . .

Definitely rent a car in Tenerife, as there is a lot to see and do all around the island!
In terms of hotels: for $250/night you could almost get a room at one of the high-end resorts in the south west (Palacio de Isora, for example), but that's not what I would do. That area is quite barren, and overbuilt in many parts.
I'd much rather stay somewhere in the north coast, which feels more charming. For example, I had a great time at Hotel El Patio, near Garachico, in the fall of 2018. Charming place in the middle of a banana plantation, with large rooms (rustic decor) and a pool. Hotel San Roque in Garachico itself looked really very nice too (a bit closer to your quoted budget).
The roads are excellent so it is easy to do day trips all around the island - make sure to go up towards Teide volcano at least (booking the cable car if you want, but the views from below are already impressive).
This being said, Athens to Tenerife is quite the journey! It is not a very usual combo.
