We are flying out of Madrid early morning in May and need a hotel recommendation near the airport for one night after we train from Sevilla. Anyone have any recommendations? We aren't thinking luxury but not wanting one step above a hostel either.
Also, are there any attractions or restaurant recommends near that area?
Cabs from central Madrid are cheap and your hotel can book one in advance. You can have that last late night in Madrid, the usual 10 PM dinner, bed down for a few hours, take that cab, sleep on the plane. No need to stay at the airport.

My mom and I stayed at the NH Madrid Barajas Hotel in 2015.
The hotel offers a courtesy shuttle to/from the airport.
If you join their rewards program( free) you'll receive a 5% discount on your booking rate.
Our room was clean and comfortable and the breakfast buffet (extra cost) was hearty and delicious.
The only problem is that there are no good restaurants near this hotel.
You can always enjoy a nice dinner in downtown Madrid then take the Metro back to the hotel, or the Cercanías C-1 line to the airport and call the hotel to get picked up by their shuttle.
