We liked Hotel Amadeus. Don't know if it is three star or not but a very nice hotel with a good breakfast.
I don't really know about European star ratings (I know they mean the presence of certain amenities, but I'm unclear on what exactly differentiates the stars), but El Rey Moro is wonderful. Great location, beautiful rooms, not too big, very nicely done overall.
I've stayed twice at Hotel Bécquer and been happy there. Reasonably close to everything, and it also met some of my important criteria, it had on-site parking and it was possible to drive their on main roads.
My understanding of the star system in most of Europe is that it does not necessarily indicate quality although it is related. Indicates that the type of services and facilities that are available. I am sure you can google for a better definition. We never pay much attention to the star rating.
I second the vote for Hotel Amadeus. Great location, interesting hotel. Very comfortable, pleasant and knowledgeable staff. Be sure to go up to the roof for the view. If you want even more atmosphere and have the budget, a few meters down the street is the Casa Juderia. If you don't stay there, do go inside to have a look around. Just beautiful.

I have just returned from 3 nights at Apartamentos Turísticos Alianza, which I found through Booking.com. Highly recommended, as long as you are ok in an apartment without a front desk. Spotlessly clean, ideal location on a small quiet plaza just steps from the Cathedral and Real Alcazar. Washing machine on site, as well as small fridge, 2 burner stove and microwave. Super comfy bed and Ricardo, the host, met us as planned. We loved this place. 297 Euros for 3 nights was what we paid.
Hotel Casa 1800 is wonderful, just around the corner from the cathedral and Alcazar. Their afternoon tea & snacks is a welcome treat. Try La Bulla for tapas!

Hotel Amadeus, El Rey Moro and Hotel Casa 1800 are all within a few hundred yards of each other and should have similar amenities.
We stayed in the Hotel Amadeus last May and were able to walk everywhere in Seville. We stayed in the Franz Liszt room (every room is named after a famous composer) and were quite comfortable.
There are wonderful tapas bars just outside your door. We enjoyed visiting both the famous traditional bars like El Rinconcillo and Las Columnas and the more modern takes on tapas at bars like Vineria San Telmo. All are just short walks from whichever hotel you choose to stay in. If the place had a tablecloth, we kept walking.
We are staying at Hotel Simon so I'll let you know how it goes!!
Another vote for Hotel 1800. Beautiful hotel and it is smack in the middle of the heart of Seville. Helpful staff. Great breakfast. Very nice rooms. And when we met our friends there who are from northern Spain - they were so impressed and said whatever guidebook I was using gives awesome recommendations (RS of course!). We also went to a RS bar on the other side of the river with them and our friends couldn't believe at what great recommendations I was finding for them!
