Good Hostel in Madrid?

I'm looking for a recommendation on a good hostel centrally located in Madrid. I don't want a party scene, I'm looking for something relatively quiet with a kitchen available for use. AC would be nice as I'll be there in early September. Any suggestions?

I recently read a great recommendation for Hostal Adis.
I have been considering for our upcoming trip in late September.

Thank you both for your replies

I am asking about a hostEl, not a hostAl. I understand the confusion, having stayed in both in Spain!

But I suspect very few hostAls would have a kitchen for use, or a "party scene" as they are just low cost hotels

The hostels in Spain are very different than German hostels. You usually do have your own bathroom, sometimes an elevator but not always. It’s been over 10 years but we stayed at Hostel Adria and Hostel Adriano. We had no street noise, no views but views are what gives you street noise. You won’t be in the room that much hopefully! Our trip was Madrid , Barcelona for 3 days and then Madrid again. They offered to keep some of our luggage for the short trip to Barcelona. Wonderful people! I don’t remember if there were any kitchens available. Know that often times a place is a bar at night but a breakfast/coffee shop in he mornings.
