Which is best? We're trying to decide which would be the easiest. Any recommendations would be greatly appreciated.

The EuroMed train takes about 3 hours and is frequently delayed. It isn't high speed whatsoever. My last trip on it (round trip Valencia - Barcelona - Valencia) was last month and it was delayed both ways. The BCN - VLC leg was delayed so much they refunded me the entire cost of that leg of the journey. You could consider the Alsa bus also, particularly if you are going to the BCN airport. https://www.alsa.com/en/web/bus/home
