Family travel to Spain over New Year's

This forum is always a wealth of information. We are considering a family trip to Spain after Christmas, 12/28-1/5, giving us seven nights in Spain, plus travel to and from the States. Unfortunately, it will be shorter than what we would like, but we work with the time we are allotted. I am looking at open jaw tickets, into Madrid and out of Barcelona, splitting our time between the two cities. However, I am also intrigued by the idea of round-trip through Madrid, saving Barcelona for another trip, and spending the week in Andalusia--Cordoba, Grenada, Sevilla. We will be traveling with four kids ages 11 to 17. We would want to visit a maximum of one big art museum, so I don't know that we would want or need much time in Madrid. I am also trying to take into account December weather (although chilly won't really bother us) and, more importantly, the fact that it looks like most everything will be closed on New Year's Day. With only a week, obviously we want to maximize our time. Any advice is appreciated.

We did ten days into Madrid and home from Malaga in that same time period. Looped down through Cordoba, Seville, and Grenada. We were in Seville for New Years eve and day and everything started shutting down around 3, 4 pm and nothing was open on NY days. A tour guide earlier had cautions us about the closures on NY day so we hit a local grocery store and loaded up on wine, cheese, meats, bread. Our hotel had a roof terrace that was great for a couple of picnic meals. The hotel provided breakfast but nothing else. Worked well for us.

Fly into Seville and out of Malaga or vice versa. Instead of a art museum either go inside and see the Mezquita and the Alcazar in Cordoba or Seville or the Alhambra in Granada. Take a picnic and go to the sea or an ocean side town like Malaga on New Years Day. That is what we did last January and we got a high of 70 degrees
