For my trip to Spain in a couple weeks, I'll be entering the Schengen area via Frankfurt, then flying to Madrid. From there, train to Seville. After Seville, thinking of flying to Valencia and am working through logistics of that. Am I all done with EES after my entry through Frankfurt, or do I need to plan for additional time at the Seville airport for this? Tx

You will be done in Frankfurt, nothing at any of the other intra-Europe flights. EES only applies to entry immigration at your first Schengen stop.
Possibly, and eventually, you will do something similar at exit when you fly home, basically scan your passport, get your picture taken, but that goes pretty quick.
