Ending trip from Ronda to Madrid

Planning a trip for October 2019. Assuming at this point flying in and out of Madrid. Starting in San Sebastian (4 nights), on to Barcelona (4 nights), Granada (2 nights), then looking to spend a few days in Ronda to recover as it seems laid back and quiet. My question is how to finish off the trip. The plan at this point would be to leave Granada on a Monday and then we would need to be in Madrid by Thursday evening for a Friday flight back to the US. I'm thinking spending all three remaining nights in Ronda and then making our way back to Madrid on Thursday. I'm aware I can see all of Ronda in a short amount of time, but after Barcelona and Granada I'm not sure how much sightseeing my young daughter (7 at the time of travel) will be up for, so somewhere quiet(er) to recoup would be nice. Am I cheating us out of a better experience though? It just looks so nice and peaceful there. Also what would be the best way to travel this stretch - bus to Ronda, rent a car if we need to while there, train to Madrid? Appreciate any suggestions!

Also, any suggestions on things to do in Ronda (other than the obvious sites listed on every page) would LOVE to hear them! Bonus points if it would add a bang to the end of the trip for a 7 year old girl!
