I forgot to add this to my last post, but was wondering if anyone knows if electric charging stations are quite prevalent in Spain and France

The short answer is no.
The infrastructure in rural areas isn’t that great and even if there are chargers there’s no guarantee they work. I would not rent an all electric vehicle to get around, especially if you plan on visiting rural or remote locations. A hybrid would be fine, which is what we had on our France/Germany trip last year.
