El Camino de la Santiago

I am in the planning stage for making this hike across the north of Spain. I have a somewhat unique situation. I have had what is called a vertical lap sleeve operation that removed about 80% of my stomach. This was a good thing and I now weigh 125 pounds less than I did last year. I am also exercising a lot more these days which makes this walk look very interesting as a test of my new body, but I have some interesting eating restrictions. So my question: has anyone out there who has had bariatric surgery made this or a similar walk? If so what advice can you share on the topic? Can anyone point me to a good source to help me plan a healthy diet along the way? Any and all advice is welcome.
