We are driving from Granda to Ronda then on to Tarifa and back up to Seville to turn the car in. We bought a road map but would love any help with which route and roads to actually take. We are also wondering how long it takes to drive from point to point. We have a night booked in Ronda and two in Tarifa as we are going to Tangiers for a day so we have an entire day to drive from Granada to Ronda and a day to drive from Rhonda to Tarifa.

I've not driven in Spain, but you may find these websites helpful:
You may want to take a detour on your drive from Ronda to Tarifa & visit Grazalema.
Looking at rome2rio, it looks like you will be very close to Cádiz & Jerez de la Frontera on your drive from Tarifa to Sevilla

Granada to Ronda is a couple hours, mostly highway. You can stop for a few hours and visit Antequera on the way. From ronda to Tarifa, also a couple hours, the road south is good, through the scenic hills. At the coast. you can take the toll road which is fast. There's a road that runs parallel to it, much slower because of many roundabouts.
