We will be driving from Lisbon to Sevilla this weekend. Any suggestions on where to stop for lunch? And any other driving tips?

Don't do it , drop charge on rental car is huge from renting in one country and dropping in another.
I assume you’re returning to Lisbon to avoid the large drop off fee already mentioned. You could go to Sevilla via Zafra. It’s about in the middle. On your return you could take the more southerly route west past Huelva into Portugal then turn north back to Lisbon. Either route will take 4 hours 45 minutes or so. There are tolls on the Portugal roads.
Going via Zafra, in the same area are Castle Nogales, Castillo de Feria s. XV, and Jerez de los Caballeros. It’s described as a very picturesque small town. The old town is surrounded by a Moorish wall with six gates.
Along the southern route in Spain is Niebla Castle and Dolmen de Soto.
