General and combo tickets to the Alhambra are sold out for the time we’re in Granada and I found that the only way to see the whole thing (Nasrid palace and all gardens) could be to purchase nighttime Nasrid tickets and a separate garden ticket for the same day. I’m hoping this would allow me to see the gardens during the afternoon then get into the Nasrid palace at night. Will this work? I see that the garden area closes at 8pm but the nighttime Nasrid tickets start at 10pm. Is it worth it to try it this way? If we do have to leave the grounds between tickets, are there places nearby where we could get some tapas/food/drink to enjoy the downtime?

Have you checked with your hotel for tickets? We got our tickets that way. I understand that a block of tickets are set aside for hotel guests.

I agree on checking with your hotel. While seeing the Nasrid Palace by night is better than not seeing it at all, it's not the same as seeing it by day (and nighttime viewing of it is definitely a lesser experience).
Yes, there are various places to get food and drink. Note that while parts of the complex require tickets, other parts are open at any time, so you may have to leave the gardens by 8 PM, but you will be able to stay within the "grounds" if you wish.
