We will need to buy coach tickets from Bilbao to Vitorio/Gastiez for May 13th. We will be in Bilbao from the 10th-13th,
Should we buy the tickets online a few weeks before our travel date, or would we be "safe" in waiting until we are in Bilbao to purchase?
Is there a "best" coach company to travel with, or should we just go with whoever has the best schedule for us?

No need to buy those in advance but one less thing to do in your planning. There are 3 or 4 buses an hour on that route.

It´s a regular bus service with many daily departures, absolutely no need to book in advance. Same goes for Donostia-San Sebastian, public transport is massive here. Bus is cheap, modern, clean, safe and an excellent option.
Just in case you buy them online, check the correct spelling, Vitoria-Gasteiz.
I once ran into a sold-out bus in Bilbao (not going to San Sebastian; I might possibly have been going to Vitoria-Gasteiz), so I know it is possible. I'd recommend keeping tabs on the website of the appropriate bus company in the week leading up to the trip to be sure buses remain available, then buying tickets once you're sure of your desired departure time.
