Hola! We, a family of 6 with kids ages 14-22, are excited to spend more than a week in Spain. We will be in Seville on Christmas Day. Does anyone have any recommendations of things to see or do that day? We do not celebrate the holiday. Thank you!
Sorry but when we were there, it was shut down pretty tight. You can walk around some outdoor sites, parks, etc. The only restaurants we saw open that day were associated with hotels and were packed. We had been cautioned by our walking tour guide the previous day to lay in some food supplies for Christmas Day -- "nothing will be open." Fortunately our hotel had a roof top garden so we have both lunch and dinner there from the food items we had purchased the previous day at a local grocery.
I don’t recall much being open on Christmas Day even though their big celebration is Dia de los tres Reyes (3 kings day) on January 6th. You can check the various sights’ websites and maybe you’ll find some open places, but I would expect the cathedral or Alcazar to be open. If you’re there on another day, then see those places when they are open and use Christmas Day to see places like Plaza de Espana, Torre de Oro, Maria Luisa park, and just wander.

Yes... for services.
If you don't want to participate in a service, you may want to find out at what times the church is open for sightseeing. Some churches in popular tourist destinations have had to take pretty drastic measures in order to keep tourists from running all over the place and taking pictures during worship, so you may want to check at what times sightseeing is possible.
