Canary Islands in March

We're planning to meet up with our son, who is working in Madrid, somewhere in Europe the last 2 weeks of March. We were wondering if the Canary Islands would be a good choice. We're more interested in exploring nature (the national parks, for example), and hope to avoid the most crowded areas. Since this would be over the Easter holiday, are we going to have to contend with a lot of crowds? Will we have difficulty finding lodging at this late date?

We'd also be interested in recommended itineraries.

We're thinking of flying in to Gran Canaria and spending a few days there. Also Tenerife, but we'd also like to explore a few of the less populated islands as well. Any recommendations? We do plan to rent a car to make the most of our experience.
