Any recommendation of one over the other? We will making our way north from Tarifa and looking for a city to stop in on our way to Seville. I understand that Huelva is a walled city - is that correct? Thanks!
I've never been to Cadiz or Huelva, but I liked Ronda a lot. Very picturesque setting at the top of a ravine. It retains some of its medieval walls. Your path also takes you not far from Arcos de la Frontera. It looks as if either of those cities would also be a possibility.
I was curious about Huelva and Googled "Huelva walls". I think it's a town in Huelva Province that is walled, Niebla.
I do not see Huelva as on the way to Seville, neither am I aware of any walls. It is industrialised.
Cadiz is one of the oldest continually inhabited cities in western Europe.
So if this is simply a vote, obviously Cadiz, plenty of info. available in your guide book or with a google.

Ronda is on the list before Tarifa, since we will be in Granada and Cordoba for the early portion of the trip.
Good to know that you enjoyed it. :-)
And the Arcos de la Frontera was a possibility after Tarifa, so I will look at that a little more closely.
