Booking train tickets in Spain-Trailine looks like the best option.

My itinerary:

Barcelona to Valencia. My uderstanding is that there is a local train from the airport to the el prat train station. It's my understanding that from El Prat I take a train to Valencia.

Valencia to Seville.

Seville to Madrid.

Madrid to Sitges

Sitges to Barcelona. My understanding isa that you take a commuter train to the el prat train station, and take take another train to the airport.

From what I can gather my best bet is to book my tickets through trainline.becaue they exhibit all the connecting trains.

I understand that trainline does charge a booking fee. What is your experience with trainline?

For my trip last month, I used Trainline to research options, but then booked directly with Renfe or Iryo based on the best option in terms of cost and departure times.

The main station in Barcelona is Sants, not El Prat (that is near the airport).
(It would be convenient if the high speed trains also called at El Prat station, but Spain train travel is not about convenience...)

Trainline and Rail Europe are both good options for tickets..

Sitges is on the Barcelona Rodalies network, so if you get a /RENFE ticket to Barcelona. (and I believe also with Iryo tickets) you get that included. You will need to get to a ticket machine in Sants and enter the Cercanias code that will be printed in your ticket to get the suburban ticket.

Currently Iryo has the nicest trains.

For Sitges - Airport you are actually best off to take the bus. There is a bus every half hour, and it is direct. If you go by train you need to change to the Metro there, as the trains do not net yet reach the new terminal. You will find info on those buses on the airprot website.
