My husband and I will be visiting Bilbao at the end of February. We are interested in visiting a few wineries and learning more about the area. Any recommendations for sites to see and hotels would be really appreciated.

Large wineries are mainly located in Rioja Alavesa region, around 1 hour and 30 min from Bilbao by car.
The Marqués de Riscal winery, in Rioja Alavesa, is outstanding for many reasons and they offer different tasting and tours:

There are smaller and closer wineries in Bizkaia, mainly those producing a local wine called Txakoli. There is txakoli museum in Bakio, called Txakolingunea, they offer tasting of txakoli:

In the other hand, some recommendations for Bilbao:
Food: Eat some pintxos in the Casco Viejo and/or Ledesma street
Sweets: Chocolate truffles and Carolinas in Arrese patisserie, bollo de mantequila in Zuricalday, ...
Mid budget restaurants (50€ or less ): Al Margen, Los Fueros, Yandiola, Kimtxu
Museums: Arkeologi Museoa (Archaeological Museum), Museo Athletic Club and the Tour San Mamés, Fine Arts Museum
More: take the funicular to Artxanda and see the city from above; take the metro to Areeta (Las Arenas) and see the Bizkaia bridge and have a walk in the "Paseo de las Grandes Villas in Getxo"; take the metro to Plentzia and visit Plentzia old town and the beach.
