We are booking a wine tasting at bodega Garcia hidalgo in the countryside of Ronda. We were thinking of renting bikes to ride there. Does anyone know how the roads are ? Should we get a taxi instead ?

I have a vague recollection of hills around Ronda. I don't know what kind of terrain you will encounter or whether there are blind curves on the roads in the area that would make them dangerous for bicyclists. Have you checked out the route on Google Maps? If you zoom way in you may be able to figure out what you'll be in for.
