Barcelona-Valencia-Granada-Madrid?

Hi fellow travelers! I am heading to Spain for the first time in late April to early May, with 13 full days to explore. I am thinking about Barcelona-Valencia-Granada-Madrid, but not sure if this is too ambitious for the time period I have. I enjoy the outdoors, history, art, food (markets and dining), and would like to see the coast as well if possible. I am thinking about a day trip to Girona from Barcelona to gravel ride or at least rent a bike somewhere to enjoy the scenery that way. I know Spain requires multiple trips but I am hoping to hit "traditional" Spain on my first trip, and then eventually heading to the north on another trip. I definitely don't want to be on a train, bus or plane every single day, either. I do not plan on renting a car, and plan to use buses and trains. I would love your thoughts, and open to suggestions if I am missing out on a "must-see" area, such as Cordoba. I fly into Barcelona, and fly out of Madrid.
