Hello, my husband and I will be taking the train from Barcelona to France at the end of October. Our goal is to get to Paris but I'm wondering if there is a destination worthy of taking a day or two to stop along the way. Any suggestions? Or should we go directly to Paris?

There are many destinations along the way worth a stop. Consider e.g. Lyon, Montpellier or Avignon
Collioure, France just north of the Spain/France border. A perfect spot to visit, relax by the sea.
Marseille, the underrated 2nd city of France. Stay in a hotel near Vieux Port, arrive harbor side early in the day to see the fishermen and their wives selling the day’s catch, visit the Basilica of Notre Dame, the Museum of Civilizations, roam the streets north of the port to see numerous artisan workshops, take a boat ride from the port to visit the calanques south of the city and circle Chateau d’If. As extravagant as it i$, have bouillabai$$e. Lots of dining opportunities in the streets surrounding the port.
Some of the restaurants in Marseille that were excellent were recommended by two clerks at my hotel. Use them as a great resource of the local scene.
If you're taking the train -I presume the high-speed train- there are only a few places you can choose from. Trains stop six to ten times on their journey to Paris depending on which train you take. All trains stop at the historic cities of Girona, Perpignan and Montpellier.
