Barcelona - Gluten-free, Celiac disease

Traveling the month of April with a dear friend who has celiac disease. Gluten-free food is a must for her. Any restaurant recommendations that you know that take those with this disease and gluten-free options very seriously? There can be no cross-contamination, which is what I see as the primary challenge. We need to locate chefs that understand how ill a person with celiac can get with any contact from gluten.

And yes, we know the safest way to go is to cook and eat at our apartment, which we plan to do.

I am gluten sensitive, but not celiac, so though I understand the challenges of avoiding cross contamination, I have no direct recommendations. I also didn't make it to Barcelona.
I did find as far back as 2017 that Spain had robust signage for allergies on the menus...and so are aware of the difficulties, but even then, this would not be the discussion I would have with the waiter, you will want to ensure the kitchen is adequate by speaking with the manager or chef.

In Spanish. "Sin gluten" and "celiaco" are your friends. Also consider producing some hand out cards in spanish to go to the chef.
I also read blogs from celiac bloggers for Spain to better understand the challenges.
I am sure you know, but remember to have any epi pens or 9meds on hand.
