There's no tourist season in Barcelona, the city is a constant destination all year long visited by vacationers, business tourists, weekend escapades, concerts, exhibitions, festivals, etc. So, yes, pre-book.
Also to mention this city is much more than Gaudí, but even if you focus only on this architect, "Rick's guide" mentions only a few of the Gaudí sites (as well as other Modernist architects, such as Domenech i Montaner, Puig i Cadafalc, Enric Sagnier, etc.), but there are other sites worth visiting also designed by this genius, in all nearly a dozen visitable sites from Gaudí... just in case you're interested.
Too many sights prebooked can leave little room for flexibility through your day. I'd suggest locking in a big sight first up each morning, then let the rest of the day flow freely.
