Advice on Dairy Allergy in Northern Spain/Basque (Bilbao, Leon, Oviedo, Santiago de Compostela)

Hello, does anyone have experience dining in Spain and Basque County with a dairy allergy, specifically in these cities (Bilbao, Leon, Oviedo, Santiago de Compostela.)

My Dr suggests the dairy produced in Europe is different than in the US (beyond just the pasteurization) so I may not be as sensitive to cross contamination but that's just one factor. I'm wondering about your experience communicating with establishments and if allergens are generally labeled.

For example, traveling in England, food allergies are a breeze, everything is labeled or has an allergen QR code. In the US, it's a total crap shoot and varies greatly on region and diligence of the server. I'm trying to gauge what to prepare for. (My allergy is not fatal, but I will break out in hives all over and have a really unpleasant evening.) Thanks!

Do you experience a different reaction with sheep or goat dairy, vs. cow, or is all dairy in the U.S.A. the same?
