Yes! There is enough to see and do for 7 days Seville.
But you will probably get stir-crazy. In 2017, we used this company for a day trip to Jerez de la Frontera and Cadiz. We got a wonderful taste of both places. I would gladly spend a few days in Cadiz, but that is beside the point.
If outdoors/ natural beautynight appeal, look at outings to Caminito del Reyes.
Although staying overnight (or for 2 or even 3 nights) would be justified, a great many people with limited time take a day trip from Seville to Cordoba. The trip will be fastest on an express train. Those fares can be a lot lower if you purchase the ticket in advance, but that commits you to a specific train time on a specific day. Fast trains on that line do sometimes sell out.
If you aren't already seeing Cordova, I think that's the best day trip from Se ille by a considerable margin, but if you want other options:
- Carmona by bus
- Jerez de la Frontera by train if you're interested in sherry or horses. Sold-out trains are possible, but for most trains the fare remains the same, no matter how early or late you buy the ticket; it's usually €9.20 one-way.

The opportunity to relax and take a deep dive in to this wonderful heart of Spanish culture is full of rewards. Suggest renting an apartment to obtain a kitchen where you bring home vittles form markets to enjoy.
We spent 4 nights in Seville last fall and, even with the heat, wished we had 4 more! Big city with lots to see and do without day-tripping. We are "slow" travelers and seek more than a "major sights and next place" experience. And IMHO, Cordoba is far too good for just a day trip.
