We will be in Galicia for 7 nights and have reservations to stay at Moure near the Cathedral. We do not hike. Our European visits are centred primarily with the occasional sight seeing, walking, and of course eating.
our question is can we do day trips and return to Co postulate every night or do you suggest we break it up. If so, where would you suggest stay? From here, we re headed to Porto, Lisbon for a week, and then flying to Emilia Romagna.

Assuming you’re referring to the Moure hotel in Santiago de Compostela, there’s no reason you couldn’t take day trips from Santiago. Some options might include Muxia, A Coruña, Betanzos, or Lugo.
Whether you break it up might be decided on how you plan to transit to Porto. If taking a bus you could spend a couple nights in Pontevedra, Baiona, Cambados or other coastal town.
I understand you´re staying near the cathedral of Santiago de Compostela, right? Galicia has four other cathedrals.
If it´s Santiago de Compostela, you have easy day trips to A Coruña, Pontevedra and the beautiful Rías Baixas region. For Ourense and the Ribeira Sacra you may want to stay closer to this area. Vigo may also be too far, but I´m not a big fan of this city.
