If I´m not wrong, the Sanfermines running of the bulls will start on July 6 and end on July 14. The running of the bulls takes place every day at 0800am and you do not need tickets to watch this, you´ll need them for the bullfight that takes place at 0600pm. Just take into account that it will be very crowded and there is a great festive atmosphere all over Iruña-Pamplona.
The Basque Country has 5 regions producing wine: three of them produce "txakoli" wine (Getaria, Bizkaia and Araba D.O.), then we have Rioja Alavesa D.O.Ca. wine region, and then it´s the Iroleguy wine region in the French Basque Country. Rioja is closer from Bilbao, but can also be visited from Donostia-San Sebastian. 6 days in D-SS may seem too much time, unless you plan side trips to Getaria, Hondarribia, Pasai Donibane,..., and take also into account that beach weather is not always a possibility, as this is a rainy area.
