2 Weeks in Spain For First time Late April, May, Help with Itinerary Please

My husband and I are planning to do a first time trip to Spain in late April/early May for 2 weeks. We are very active 60+ and love to hike, cycle, sight-see, museums, lots of outdoors. Our first thoughts were:

Barcelona from Toronto-4 nights
Mallorca-fly-4 nights-to possibly do some cycling and hiking, fly back to Barcelona
Madrid-by high speed train from Barcelona-4 nights
We are stumped on what to finish with for the last 2 nights-Seville?????? Fly from Seville to Toronto? Generally if we fly from Seville, we are stopping in Lisbon, making it an 11 hour trip+ rather than 8 hours.

We've had spot-on advice from this travel forum for our last 2 trips and like to generally spend 4 nights in each location.

Is there a more efficient way of doing this? Are there quiet beach/cycling locations that we could get to other than Mallorca? We have not booked any flights yet, because we are stuck on the flow. Thanks in advance for your insights!

I can't help with beach info, but I can tell you that going to Seville for just 2 nights is really insufficient. Better options (more suited for that limited timeframe, and also closer to Madrid) would be Toledo or Cordoba. Alternatively, you could spend 2 nights in Zaragoza, which is right on the express rail line between Barcelona and Madrid. Or spend 2 nights in Girona, north of Barcelona.

Or add 1 night to Barcelona and 1 night to Mallorca.

Sitges instead of Mallorca.
We loved our 3 nights in Sitges.
Lots of beach.
Good food.
28 minute train ride on the R2sud from Barcelona Sants.

Do you want to walk along the beach, or do you want to swim? I am doubtful that it will be warm enough to swim at the time of your trip, but I don't know for sure.

@acraven thank you for those suggestions! Very helpful to take Seville out of our plans as it is too far. Also great to have options on the train ride from Barcelona to Madrid. You were super helpful on our trip to England 2 years ago. Much appreciated!

Davebarnes, appreciate your suggestion for Sitges instead of Mallorca. Will check this out. It is like a giant puzzle trying to piece a trip together. This forum has never done us wrong.

Acraven we like to hike, walk, enjoy the outdoors. Swimming is not necessary. I can see that the temperature will not be inviting for swimming.
