2+ days in Madrid, looking for 'best' itinerary

We're going to be in Madrid for 2 full days (maybe another 1/2 day depending on other travel) in mid-April (primarily over Easter weekend), and I'm just starting to plan things out a bit. How much will be closed on Easter Sunday? I have seen the list of the main sights, but wondering if people have thoughts about a decent itinerary to see things. We were in Madrid 25 years ago, so its almost like our first time. We'd probably spend some time at the Prado, but we are not really museum goers. Generally we'll take various walking tours, maybe do a food tour, etc. Also looking for insight into reasonable but relatively central locations or hotels. Thanks!

I stayed at Hotel Europa with a RS tour and again on my own. As central as it comes, but that does mean it is in a busy/potentially noisy location. For a short stay it was great though, and close to transit and Chocolatería San Ginés, a good stop IMHO.

You might do a quick search of forum posts - there have been a lot of questions (and answers) about being in Spain at Easter.

Hi, Eric, I just have one comment/question. You say you're not really museum goers, and you only have a couple of days, so why would you spend any time at the Prado? Personally, the Prado would be a highlight for me, but if you're not into museums, why not cross that off and spend the time at something you'd enjoy more?

On the other hand, if you are still wanting to go to the Prado, but have limited time, I have seen that there is a pre-opening tour that gets you in before the crowds and hits the main highlights of the museum. As I recall, the Prado opens at 10AM and that tour gets you in at 9.
