I'm looking for recommendations for housing, either hotel or airbnb in sevilla and granada for 4 with option for parking in may.

Airbnb is becoming increasingly rare in Spain due to regulations.
May I suggest you use Booking.com and put in parking as a filter. From experience, I always look at the "can I park there" section at the bottom of each hotel's page, as sometimes it is "public parking nearby" rather than private on site spaces.

Many years ago, my mom and I spent one night in Hotel Fernando III when Hotel Amadeus (nearby) didn’t have vacancy for the total number of nights of our stay in Sevilla.
The hotel is centrally located, clean, comfortable, and with parking.
Our trip was in October so prices were more reasonable then.
We did not eat breakfast at the hotel so can’t speak to that.

Keep in mind that there are various fairs & festivals across Andalucia in May. Here’s a helpful website: Andalucia.com

Sevilla Plaza apartments has at least one two-bedroom, two-bath apartment. This page indicates there is public parking nearby and the possibility of paying for private parking:

Read reviews on booking.com with an eye to comments about air conditioning. Avoid places with multiple complaints about the a/c, because Seville in particular could be very hot in May.
