We have booked hotels in Barcelona, Granada, and Cordoba and are now looking at Seville. We don't spend too much time in our room, as we are out and about all day, so the only real requirements are clean, comfortable bed, and safety. Any recommendations for hotels in Seville under $100/night? We will be there in December.

We stayed at Petit Palace Puerta de Triana. It comes in at just over $100/night in December, but might be an option for you.

Have you tried Booking.com?
For a random date in December, I see plenty of options, mostly apartments, but some hotels. Note that the prices shown do not include all fees and taxes, you need to look at the listing and see what is not included, mostly it will be the 10% VAT. You can sort the results by cost per night, lodging type, and a hundred other things.
Costs drop with distance from the part of town you want to see, and I suspect as you get closer to the holidays, prices go up. Also be a bit leery of new listings, those with only a few reviews. They can be great, or a bit overstated.
