We are hoping to travel this fall (2021) including a few nights in Valencia and would really appreciate any suggestions for a good place to stay.

The Marriott behemoth has absorbed the AC Hotels chain and there are two AC's in Valencia, one called Colon that is right in the heart and another called Valencia that is out by the futuristic science museums complex,
and either is a bargain, especially if you have Marriott points to use, because for some bureaucratically inscrutable reason they are classed as category 3 and 2, respectively -- a steal for anyone who is tired of spending too much on Renaissance or JW rooms. Ditto Westin -- these AC spots are like Westin quality at Springhill rates.
I usually use my elitism card when discussions of chain hotels come up in the forum, but AC (aka Ambassador) was among a small number of chain properties that I grew to enjoy.
Don't eat at their restaurants, though -- this is Valencia!
** editing to add that wikipedia says that Marriott took over AC Hotels in June of 2011, but it doesn't indicate that AC Hotels had absorbed Ambassador previous to that, so I may be wrong about the past dealmaking -- the current Ambassador chain in East Asia is not related.

I stayed at Hotel Ayre Astoria Palace and highly recommend it. The staff were wonderful and the location can't be beat, right in the center and less than 10 minutes' walk to the train station. I was there during their huge festival, Las Fallas, marching bands early in the morning, fireworks at 12 or 1 am and crowds everywhere, the room was quiet - and spacious.
Hostal Venecia is in the city center. We love it there.

To clarify: a hostal is not the same as a hostel. Hostals are inexpensive hotels.
