jamon iberico in Seville

Hi, we're heading to Spain in March and determined to seek out some awesome local dishes, especially jamon iberico in and around Seville. Some say you will find good ham everywhere, but I will be grateful if you can share any special spots. Gracias!

No, I have not done a tour with the company. I learned about the company because Rick Steves took a tour with them and posted about it on social media a few months ago.

I've taken a tour with Shawn; excellent.

Almost every restaurant will have JaMon Iberico on their menu and, as a novice, you almost surely will not be able to distinguish between the various grades--100% ballots, red label, black label, etc.
