Last November I enjoyed three nights at La Posada de Manolo. My total bill was 210 euros for all three nights, breakfast included, double standard room. Themed decor (see website), memory foam mattress (heaven).
Operated by a very helpful couple, Manolo (good English) and Almudena (excellent English). Centrally located, right behind the Cathedral and with nice views of it from their top-floor breakfast-room terrace.
A few steps down the street is a delicious vegetarian restaurant, Madre Tierra, where I ate three different times because I was craving salads. A few steps up the street, I had a memorable lunch at Los Quatros Tiempos.

Thank you for reminding me of La Posada de Manola, had forgotten the name. We stayed there in 2017 for two nights and it was wonderful. I am delighted to hear that they are still there. If you are there, do not miss seeing the view of the Cathedral at night, a short walk away.
Larry, yes the cathedral exterior is stunning at night!
I did as Rick suggested in the guidebook: enjoyed mazapan from a bench in Plaza Ayuntamiento while people watching and gazing at the front facade of the cathedral one evening. All the day trippers had gone home :)

We stayed at Hotel Eurico, mentioned above, for one night on a Rick Steves tour in late April. It's in a very central location, steps away from the Cathedral. Moderate range, I would say, and the staff was very helpful.

My mom and I enjoyed our stay at Hotel Santa Isabel. Our room was comfortable and clean, the staff was friendly, and helpful, and the breakfast was delicious (I think it’s extra)
Just make sure you don’t get a room on the third floor (top floor), because there’s a terrace on the roof and the metal chairs are very noisy.
Our room was on the 3rd floor, it was a great room with a view of the cathedral spire beautifully illuminated, until the noise started and we couldn’t get to sleep!
The following morning we asked for room availability, away from the 3rd floor, & we were switched to the second floor which was quiet.
