Rick's description in his Spain book makes this one sound lovely, near the Cathedral: www.hoteleurico.com. There are quite a few other affordable listings, too, around 60 euros for a double.

Hostal Posada de Manolo also near the Cathedral is the one I have stayed in several times. Clean, efficient, and has a great breakfast on the top floor and on the roof overlooking the Cathedral.
