Hard Time with Two Week Itinerary, Appreciate Feedback

Hi all,

I have put together a lot travel itineraries over the years, but am having a hard time putting together a two week itinerary in May for my partner and I. We are both in our late 50s, enjoy hiking and the outdoors, but also appreciate architecture, small villages, and urban areas. We will have a rental car for this trip, and I would appreciate any thoughts or feedback on this itinerary. We have a general idea what we want to see, but aren't sure if this is the best itinerary for it. I've read this blog and guidebooks and am still struggling. I feel more confident about parts of it, but am at a loss with others.
