We are catching a flight on monday to London from Edinburgh that departs at 10:00am.
What time should leave Stockbridge (taxi)?

I would ask a local taxi firm - they will do this regularly.

at that time of day I would allow about 40 minutes, hopefully a bit quicker. I would allow being at the airport about 2 hours before the flight especially if checking bags, security might take a while that time of morning too as it is the start of the week and lots of commuter flights going out.
BTW Stockbridge is a lovely area of the city ,I was born there more than 60 years ago (Leslie Place) and would move back tomorrow if I could afford a house in the area.
