I am sure you can't go wrong with the Michelin-starred restaurant in the Balmoral Hôtel. The brasserie is probably excellent too.
Not sure if it is the "very best", but it's very good. Maison Bleue at 36 Victoria St. just off George IV Bridge St. just off High St. (The Royal Mile) and close to the castle. You can't miss the blue façade. Did not need reservations for lunch, bur reservations are advised for dinner. Small place, same ownership for years, and excellent food. Go to googlemaps.com, type in the address, and you'll be able to locate it easily. You can use the street view to "walk" to it before leaving home.
I loved Dishoom in Saint Andrew Square. It was absolutely wonderful. Sort of new age Indian food. I also had a wonderful Italian meal at Amarone, which right off St. Andrew Square.
My cousins and friend took me for lunch at “Honeycomb” in the Bruntsfield area in December.
Very busy so you need a reservation.
The food was really good and big portions.
I found out that the owner is the son in law of a neighbour of my friend !
Please give your definition of "very best" and state your budget. There are many good restaurants to choose from at every price point.
A very subjective request. For casual take-away, we enjoyed The Piemaker on South Bridge.

It doesn't sound like there's an upper limit, fine dining's the thing
I'd be very interested to see what turned out "best" in Edinburgh and Santorini.
Loved Scran and Scallie in Stockbridge! I still dream about their steak pie and sticky toffee pudding.
We really like Purslane, The Kitchin (one star), Restraurant Martin Wishart (one star), and Number One Balmoral (which doesn't have a Michelin star these days). Just outside Edinburgh in North Queensferry (almost underneath the Forth Rail Bridge) we love the Wee Restaurant.
