I'd suggest the Western Bar if you're into adult entertainment. Also, CC Blooms but it gets pretty wild in there at times. I like it!
I know nothing about private tours in Edinburgh, but it's always worthwhile to check out the Atlas Obscura website. It lists 162 things to see and do in Edinburgh.

The Top Ten tours are often essential but always save time for the little things, the unique experiences, that create singular lasting memories and more often than not help to support small neighborhood businesses and service providers.
While not necessarily unique in the true sense, visiting Craigmiller castle was interesting. You can take the bus and get off close to it, then walk the rest of the way. When we visited it years ago, we had the castle almost completely to ourselves. Now however, since it was used in Outlander, it might be busier. On our recent trip we went out of our way to visit the Forth Bridge built in 1890. There is something about the it that I find fascinating. We had a car so am not sure how one would get to it via public transportation. I’m not sure many tourists visit it.
